David Chang and Steven Meehan explore all the different types of smoked meat around the world. The duo explores and shares the definition of and methods of BBQ preparation across the world. I was hoping they would also cover suckling or roasted pig in Asia.

David visits BBQ Pitmaster, Adam Perry Lang to discuss the definition and expectation of BBQ and dine on some delicious beef short ribs.

#2 Pitmaster Convention at 17th Street BBQ in Murphysville, Illinois

Steven Meehan attends the Pitmaster Convention at 17th Street BBQ to discuss the various types of American BBQ and how they differ from one another. In the episode Meehan only touches on a handful of techniques with participants.

#3 Parks Barbeque in Los Angeles

Korean BBQ is served over a gas flame along with banchan side dishes. David eats dines with Dave Choe, The Owner – Jenee Kim, and Steven Yuen from The Walking dead.

David goes to Copenhagen to discuss and observe the gentle cooking using smoke and fragrant ingredients to flavor bone marrow. BBQ (cooking using embers and smoke) is cooked slowly and is an art form.

#5 Street Food and Peking Duck in Beijing, China

Dave and David peruse the street food scene. They try candied duck head and donkey meat. They then head to Li Qun Kaoya Dian for peking duck, a traditional dish of Beijing. The tradition is 700-800 years old and uses a fattened duck cooked using juju wood to bring about the delicious flavors and crispy skin that is a signature quality of Peking duck. **Peking is the pronunciation of Beijing, as in Beijing duck.

#6 Snow’s BBQ

Tootsie, BBQ Pitmaster has been serving BBQ for over 50 years to serve the best bbq to the Texas community. The food is so good that people line up at 8AM to eat BBQ for breakfast.

#7 Masakichi

David visits Chef Mashiko Kodama to dine on yakitori, or Japanese BBQ. Masahiko grills Niigata-sourced chicken seasoned with Niigata salt over Japanese binchotan charcoal.
